Question about a Mutant Zucchini
I found a huge (half an arm sized) zucchini hiding in plain sight in the garden. Great...I have everything in the pantry for zucchini bread so thought I'd spend a few hours in the kitchen. I went to slice it open to start shredding it and it was hard like a winter squash. When I did get it cut the flesh was yellow like a butternut. What happened? Do zukes go hard when they reach a certain size. (Oh jeeze.....Keep it clean folks....we're talking veggies)

4. Well I wound up cooking it
After I managed to get it into two pieces, I roasted the two huge parts until softish. I let cool and scooped out all the seeds. The cooked flesh was yellow but with a texture more like zucchini than butternut. It was very very wet so I stuck it in a colander to let it drain a bit. We ate some last night with dinner and woke up this morning so it didn't kill us. I'm going to mix the rest with some parm and bake it with a breadcrumb topping. I'm gonna hack up the other one and bake that one off too today.
