and hit all the junk food vegetarian fare.

Junk food vegetarians are simply people who hate vegetables but want to quit eating meat for various reasons.

So they try to live on protein shakes, vitamin water and granola bars. Once they finally crack and eat a junk food hamburger, the fever breaks and they spend the rest of their lives telling people how lousy they felt on a vegetarian diet.

The herbs don't help, either.

8. I've inadvertantly
become a near complete vegetarian.

A few months ago, I had lap-band surgery. I have to be very careful with what I eat. I do the occasional chicken, and a lot of fish, but that's it. I get most of my protein from fish (in ceviche) and tofu.

I do miss the venison burgers the place down the street sells, though...

9. Tofu is a much maligned food,
but I just love it. Once you get that taste for it, nothing else is the same.

10. I get pho a lot
One of my favourite foods. I used to get the beef, but I've switched to the tofu, and it's great.

We also get tofu tod at the local Thai place. Fried tofu with a sesame sauce. Delicious.

11. I think it's the texture that's off putting to most people
Not much to, just fu.

Although I could use it in things like lasagna and chocolate mousse, it wasn't until I realized what had to be done to pan or deep fry it successfully that I actually started to like it for what it is.

The trick is to dust the tofu slices with cornstarch. Once you do that, it becomes crisp instead of oily and will stand up to saucing.

I really miss the days of going to a tofu shop in Chinatown, though. The stuff in the plastic tubs is OK, it's just not the same.

12. Also try slicing then wrapping the tofu in paper towels
and putting a weight on it for a half-hour or so before cooking. The Chinatown stuff is usually fresh-pressed with a much lower water content than the tub stuff, so squeezing it out changes the texture and makes it more amenable to marinades as well.

Another cool idea -- freeze your tofu for a few days. Becomes very chewy and toothsome.

13. Pressing alone doesn't work, you need that cornstarch,
and while freezing does change the texture, I find it resembles a kitchen sponge a little too much for my taste.
