I'm baking a cake tonight, but it's out of the box. Just took it from the oven to cool.

Mmm, cake. Devil's food. White icing.

(yes I finally broke down & got one after I got out of the hospital)

Dissolve 1 Knorr chicken boullion cube as per directions. (will be experimenting w/other broth soon)
Chicken thighs
Carrots
Yellow squash
Green squash (not zuccini)--it's actually sold as calabaza verde here
Chayote (another type of Mexican squash)
Onion
Garlic
Cilantro or other seasoning

I browned the chicken in the pot, seasoning it with All Season, then poured on the Knorr mix. I chopped up a bunch of carrots (I love carrots in soup) & squash, then halved an onion & dropped in in the pot. Minced up two garlic cloves, grabbed some cilantro & chopped that up, tossed it in the pot, then added 4 more cups of water. Let it cook on the stove for over an hour. Now I have enough for lunches & dinners for the rest of the week. :9

What I didn't add that she has on her recipe: tomatoes & potatoes. I also forgot to get a lime again, to add in when it's time to eat.

More experimenting is needed (noodles? rice?), so this is a work in progress.

Acorn squash, yes, but I'm not sure if it subs. Hmm.

it's green (duh), but not as deep green as zuccini, & is striped. It may even have a name in English, but it's not used down here.

I'll check for it next time I'm at Giant Eagle. I found a soup recipe for it online posted by a Columbus TV station, so it must get some Ohio distribution. They also said you can substitute pattypan or yellow zucchini for it if you can't find it.

I also gather acorn squash is very similar to calabaza verde.

This is the time of year when it's so great to make one big pot of soup and just eat from it for a week. Tonight I had pasta with the last of the spaghetti sauce I cooked about a month ago. It freezes great. I was out of the meatballs I made to go with it, though, so I nuked some prepackaged ones.

Oops.

I'm glad they have David Shuster subbing now because I can't tolerate any other subs, but he doesn't bring the snark for Oddball like Keith does. He's too earnest. Only Alison and Rachel ever did Oddball nearly as well.

I also miss how Keith used to tape a little piece to beg and plead with us to forgive him for being away and to please watch David sub. I feel snubbed. :-(
