1. It's only expensive under two conditions:
first, the person refuses to cook; and second, the person insists on eating all the junk food s/he ate before diagnosis.

You don't even have to cook that much and the diet doesn't need to be that pious: lettuce roll ups instead of sandwiches with bread, toaster oven tostadas instead of pizzas, corn chips instead of wheat crackers.

You do need to read labels, though.

Any chronic disease is a pain in the ass and celiac is no exception. However, it can be controlled by avoiding one allergen and that alone makes it less expensive than most, not more.

3. That's not really necessary
You can live quite well with tortillas, rice, corn and rice noodles for pasta, and other substitutes.

Leavened bread is a cultural thing, not a necessity.

6. I like bread from time to time
so decided to try my hand at that.

Reality is that I can easily do this on a Mexican diet... and I love tamales.

4. My son is allergic to wheat/gluten but not Celiac
...and I have to say it is pretty hard because of the picky kid diet.

If it was me, I could do it. But, he just doesn't like a lot of the wheat/gluten free stuff.

We have found some good things, our arsenal, as I call it and we stick with those things.

I am cooking and baking more but it is always disappointing when he won't even try it. But, getting him off wheat/gluten has really helped him concentrate and has helped with his severe speech delay.
