Good recipes
An unofficial South Beach discussion site I belong to has some excellent recipe collections. Even if you are not on SBD, these are good, because they usually include lean proteins and whole grains. I just thought y'all might enjoy perusing some new ideas, since with me, getting bored with what I eat is the kiss of death to my diet plan.

5. Overnight Breakfast Bake
16 oz FF egg substitute
12 oz FF evaporated milk
6 slices white or potato bread
16 oz extra lean ham, 11% fat, cubed
1 c. LF shredded cheese

Coat 9x13 baking pan w/ nonfat cooking spray. In mixing bowl, beat eggs well and add milk. Place bread on bottom of pan. Toss ham and cheese over bread. Pour egg mix over top. Cover w/ foil and refridgerate overnight. Bake at 350 F for 45 min. Remove foil and bake 15 min. more.

Makes 8 servings at 7 points each.

I also have the recipe for Breakfast Quesidillas ((2 serv @ 4pts each), Baked French Toast (2 serv @ 6 pts each), Oatmeal Apple Bars (12 serv @1 pt each and is Core) and I have a recipe for Bran Muffins that are one point each.

Let's see what recipes they give us tomorrow!

I have four new ones from today's meeting.

(BTW-lost 3 pounds w/o doing anything)

Chicken Soup in a Pot
4 c. FF low sodium chicken broth
3 med. size carrots, diced
2 celery ribs, diced
1 chicken breast, cooked and cubed
1/2 c. uncooked noodles

Pour chicken broth into slow cooker. Add carrots and celery. Cover. Cook on low for 2 hours. Add chicken and noodles, cook on low 1 hour.
4 servings at 2 pts each.

Squash Soup
1 med. onion
2 cans chicken broth
1 1/2 c. zucchini
1 1/2 c. yellow squash
1 can Rotel
1 can cream of cheddar soup or 3 oz Velveeta,
Spray large pan w/ Pam. Saute onions until translucent. Add broth and squash, boil until tender; 15-20 min. Add remaining ingredients ans simmer until hot and bubbly.
1 cup=1 pt.

Taco Soup
1 lb ground beef
1 onion, chopped
1 can red kidney beans
2 cans black beans
3 cans Mexican tomatoes
1 pkg taco seasoning
1 can corn, drained
Brown beef in skillet; drain. Add remaining ingredients. Simmer until bubbly.
1 cup=1 pt

Strawberry Banana Split Salad
1 small pkg SF vanilla pudding mix
1 c. skim milk
8 oz. pineapple tidbits, drained, juice reserved
1/2 c. lite cool whip
1 c. diced bananas
2 c. fresh strawberries, sliced
2 T. chopped pecans
2 T. mini chocolate chips
Combine pudding, milk and juice;mix w/ whisk. Fold in Cool Whip. Gently fold in pineapple, banana, strawberries, pecans and mini choc chips. Cover and refridgerate until ready to serve.
6 servings (3/4 c.) @ 2 pts per serv

6. One of my favorites...
is whole wheat pita pizza. You can use so many different combinations of toppings so you won't get bored with it. I just put a bit of pizza sauce on, some chicken, mushrooms, bell pepper and part-skim mozzarella amend stick it in the toaster oven. Quick, easy, and tasty!

10. Oatmeal smoothie
Cook up some oatmeal, you can let it cool down if you like. Throw it in the blender with some protein powder, berries, and milk. It's a good breakfast that you can take with you to work. If you don't like the taste of oats, then use more berries to cover the taste.
