the way I heard it, Marie was talking about "ash cake," which was excess batter that spilled over the edges of the loaf pans and charred on the bottoms of the ovens. Bakers would clean it up and throw it away, and the poor would dumpster-dive for it, since it still had nutritional value, despite tasting like death warmed over. It was her version of Scrooge's "Are there no workhouses?"
