2. Because imo the military extracted what it wanted from Mubarak so they are now
withdrawing support for protestors.

4. Because it is security forces who are instigating the fighting?

6. Seems like it might have happened fast. The crowd swarmed
the Pro Mubarak thugs and pulled them down before the army could react perhaps?

Later, there were firebombs tossed off roof tops onto the peaceful protesters in the Square.

7. Depends on which "this" you are wanating to stop
the riders charging the crowd or the crowd charging back and engulfing the riders.

If the military does not know of the planned action of the Mubarak supporters they can neither stop them, not coordinate any action with them.

If the Mubarak supporters have not coordinated their acts to have military support, that should tell us a whole lot about what the military's position is and what the legal standing of the Mubarak supporters is in terms of acting for the government.
