Having an interesting experience right now:
I am sitting here in my favorite Mexican restaurant, eating a yummy taco salad and watching a futbol (soccer) match on the TV. This place is one of several in the area owned by the same extended family. It is bustling, as it usually is. Now this is how you run a business -- you don't do it playing creative accounting games and worrying about Wall Street and squeezing your employees. Betcha this place will be around long after the chain places are gone.

As La Victoria has. It started as a small hole in the wall restaurant and even though it has other branches now, is still packed every single day....and is open till 3Am.

As the OP pointed out..good food and great customer service should/must be the bread and butter of any food house....everything else is fluff that could be done away with.
