1. Too small to be unionized, but the best cheese around is the Union Star

cheese factory in Zittau, WI.

We drive by there every time we go to see my mother and always stop as long as their sign doesn't say "SHUT".

Get there after ten AM or so and the curds are just coming out of the vat, they bag em and set them on the counter with samples. They squeak on every bite when they are still warm.

I was a bit puzzled though when their curds weren't green on SuperBowl weekend.

Even though they aren't unionized it is a great way to support a family and the local farmers.

3. There are over 1200 cheese producers in WI, so most are likely fairly small

I'd bet that many are family run businesses.
