If the government wants my "metadata" well, so far there's nothing I can do about that. But if a phone company wants my money, that I have control over.

It might even work over Tor if you can get a connection with low enough latency; AFAIK the court order may cover the info that you're contacting a VoIP server it doesn't compel the release of the actual data, which contains the phone number. They know you're making a call but not to whom.
Then again, NSA's Echelon most certainly does know exactly who you're calling, but I suspect they know all about your throwaways too. Even if you buy cash.
