The only thing cooler than a government shutdown

is an impending hurricane. You take everything out of the freezer that you possibly can, and share it with family, friends and neighbors alike.

Then you brace for impact because that is the last time you will ever eat that well again for months if you are lucky, if ever, if you aren't.

Ice cream would spoil first, so I'd take that out and pig out on it first. Then veggies. Then solidly frozen stuff like tomato sauce.

There was no way to have a freezer party where I was, everybody was in the same boat with no power and trying to eat their own stuff before it rotted.

At least I had a wood stove for cooking. They were all hunched over BBQ grills in the carports.

buried, so we had gas for a very long time, and a grill with a gas burner. It made Katrina easier, but since everything about Katrina sucked, I overlook how lucky we actually were. And we were, despite how goddamned awful it was.

Casareep to keep meat from spoiling. They call the dish pepperpot and once you heat it up once a day it never spoils and I mean never. It's the national dish in Guyana and everyone makes it over the Christmas holidays. I know one place that has kept a pot going for over 100 years - they just add meat casareep and other seasoning.

We should use it more during hurricane season.

And taste pretty damn good, too.

And you are 100% right. I've learned a lot from you, Malaise about storing eggs and such. You can't imagine how much I appreciate your knowledge!

never heard of it, but I will since it not only preserves food but also functions as and antibiotic for certain conditions. I love herbal cures and interesting methods of cooking . You are a wealth of information, cher!

Real Guyanese pepperpot has beef and pork including meaty parts and cowfoot for the jelly. It's really a tasty stew that you eat with rice or a variety of breads, yams etc.
Pepperpot and Garlic pork are breakfast on Christmas morning in every Guyanese home.

I've seen people make pepperpot with lamb and goat as well.
You can make and keep any pepperpot with any meat as long as you heat it once a day and any coal or wood stove will work. The BBQ works just as well.
