They think Ryan will be a "lame duck" for his last 6 months in office. They think he won't work hard to get Republicans re-elected in November. That's why they want him out and McCarthy in as the new Speaker immediately.
From the Dem's point of view, what do we care? Not a single incumbent Republican deserves to be re-elected. Not one!
