(both as a defendant and as a criminal defense attorney), you don't argue with a cop. You wait until court and then give all the arguments you want to the prosecutor (if you want a plea deal) and/or to the Court/Judge.

While the woman arrested was going through the motions of civil disobedience, it isn't the job of the cop to make decisions and judgment of whether she was justified.

And as judges put a certain amount of fidelity to their police officers, you'd better come up with a good story to get either a dismissal or a verdict of not guilty.
