If you'd like to try something wonderful, go to the ice cream section of your grocery store and look for the Outshine fruit bars... and get the peach ones.

(38,561 posts)I have store-bought crust, and I'll fill it w/ peaches, sugar, cinnamon, corn starch, and add a touch of vanilla and some pats of butter, and maybe a squeeze of lemon juice.
pretty much what I do w/ all fruit pies, except when I make strawberry rhubarb, I add orange zest instead of lemon.

(9,353 posts)How much corn starch?
MissMillie
(38,561 posts)corn starch depends on the ripeness of the peaches... maybe 3 or 4 tbs.

A local Metropolitan Market has Peach-o-Rama this time every year and all of us practically founder on them. Its heaven.
Grilled with ice cream-yum!
