Light little flavored (all sorts of flavors - from cardamom/green tea to plain old vanilla) cookie puffs between the consistency of proper ladyfingers and meringue, with delicate fruit marmalade or stiff cream filling in between.
The filling is either supposed to exactly match or be able enhance the flavor of the cookie; a strawberry cookie with strawberry marmalade or a cocoa cookie with raspberry or orange marmalade filling are some of the most common ones to find, but most French baker booths at the farmer's market have told me they can't keep pistachio macrones with dark orange/chocolate filling in the booth.

It's an art to make properly, the shape must be exact along with the balance for the crisp and flavor of cookie to the smoothness and flavor of the filling.

All the baking shows tend to use some pastry structure with macrones as one of the knock-out challenges.
