(102,301 posts)Two of my prankster uncles passed a very bloated (and near exploding) can of sardines back and forth for Christmas for years...While canning processes improved dramatically decades ago, this can clearly pre-dated that and was full of botulism. We all knew what was coming when they unwrapped gifts but prayed it didn't explode...
Dented good. Bulging, bloated, leaking or nonintact cans definitely not!
That said, the same can't be said for 'home canning' as errors there most definitely can and HAVE produced illness including the 2015 Botulism outbreak that killed one and sickened 23 after a hot water (nonpressurized) canner was used which failed to inactivate botulinum spores in the potatoes.

Actually, she's fine.. using the same jars with paraffin seals works just fine as long as she sterilizes them beforehand. Botulism risk comes from the spores not being inactivated during the canning process. She undoubtedly used a pressurized canner which is the only safe way to get sufficiently high temperatures. Once properly prepared and canned, the risk then would only come from outside contamination(usually mold) if the seals leak, but paraffin has been used for many decades with good success. Seems like she knew what she was doing...
