(34,402 posts)Tempura might not seem greasy if it's done right, but I had some awesome tempura leftovers from an excellent Japanese restaurant that I reheated on a rack in the oven. Oh, my. You should've seen the pools of grease on the pan underneath the rack. Yikes! It was delish, though!

(14,118 posts)natural fats like all those that are plant derived and the use of butter instead of margarine. You can tell it wasn't too difficult for me to adapt to this diet! At times I even indulge in a plant-derived chocolate malt or hot fudge sundae!

(63,221 posts)I start out dredging the eggplant slices in seasoned egg and breadcrumbs and then fry in olive oil until crisp. Then drain on paper towels (try to make it less greasy).
Then layer a baking pan w/ the fried eggplant, cooked Italian sausage, ricotta, more eggplant, repeat, etc. Until the pan is full. Then bake. It's better if you have it the next day and heat up once the flavors have melded.
It's labor intensive, but delicious if you like eggplant. I crave it but only have it about 2x per year.
