Pumpkin pie "cheat" - fast and delicious!

In Costco the other day, I saw "Pumpkin Pie in a Jar" The directions - add 3 eggs and pour into a pie shell.

I decided to try it - fast, easy as can be, and very tasty.

In 1987, the November issue of Cook's Illustrated recommended adding rum to the filling mix. We have been doing that ever since, and it adds a subtle little boost to the flavor. Other than the 3 eggs, that was the only thing we added. (I still have that copy of the magazine.)
