(23,102 posts)Both my grandmothers used to make them and send them to us. We gave the cakes to the Mission every year so they didn't go to waste. These seem to be either the love them or hate them kind of desert.
I always thought they were the main course.

My recipe uses orange juice for the liquid part and lots of sweet spices. I age mine in Kentucky Straight Bourbon Whiskey

(63,221 posts)lemon cream cake or a dark chocolate cake I make w/ real whipped cream between the layers. I also sometimes like a homemade buttercream frosting, but not spread too thickly because it's so sweet. Carrot cake w/ cream cheese frosting is pretty good too! Oh, and anything with fresh fruit or fruit puree in between the layers or on top.

(34,393 posts)It's a moist cake that you mix right in the baking pan. It doesn't contain eggs or milk so it's vegan. It's utterly delicious. It gets its leavening from the baking soda and vinegar. You can eat it frosted or unfrosted. It's moist & flavorful enough to eat plain.
WACKY CAKE
The recipe, which uses no butter, eggs or milk, was popular during WWII when rationing was prevalent.
INGREDIENTS:
1½ cup all-purpose flour
1 cup sugar
4 tbsp (rounded) unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
6 tablespoons vegetable oil
1 cup water
Sift together flour, sugar, cocoa, baking soda & salt. Make 3 wells in the flour mixture. Pour the cider vinegar, oil, & vanillla in each hole. Pour water over the whole mess and stir until combined. Bake in a preheated 350F oven for 26-30 minutes or until a toothpick inserted in the center comes out clean.

(34,393 posts)you can eat it without frosting, but who wants a chocolate cake without frosting? I make an Italian buttercream and flavor it with Amoretti Artisan Natural Raspberry flavor then mix in dehydrated raspberries reconstituted in a little Framboise or Chambord. It really is to die for. This is my grandmother's recipe. I've seen others on the Web that called for white vinegar. I ran out of cider vinegar once and substituted it with white vinegar and it wasn't nearly as good. I don't know why, but it just didn't taste as rich.

(22,252 posts)I love to bake and this is prime baking season for me, what with silent auctions to bake for, last year's live auction cakes to bake (because everyone wants their cake during the holidays) and cake for family things.
I will be taking a chocolate pound cake to Thanksgiving (my husband's grandmother's recipe) and a couple of other pound cakes to the silent auction. I know I will be baking a carrot cake and one other cake for one couple.
I'll probably do another chocolate cake for Christmas with the family.
I do love a good coconut cake, with pineapple and coconut mixed in with the frosting between the layers. We used to bake a German Chocolate Cake, a coconut cake and a jam cake every Christmas. In a small Southern town you always need stuff for those drop in visitors.
If I am out to eat and want dessert, I will usually get pie.
