It's 1:30 am, so should I have (poll)

lima beans with ham hocks or corn chips with homemade salsa for a snack?

The large white ones, cooked with garlic, lots of onion, and preferably a ham hock. Enough liquid so it is almost a soup, and cooked long enough that the beans fall apart to thicken it. Those.

the ol' lady prefers red beans so that is what we will have today, but i like those lima beans cooked just like you day. on rice, with corn bread.

Those are the ones I like, although I usually get them in a can and made by Luck's. The way you just mentioned cooking them makes me want to try cooking some at home while Luck's beans are so hard to find.

P.S. Want to know something quick and good with the Luck's Pinto beans or what they call Giant Lima beans?

Get some of those brown and serve rolls that you put in the oven with margarine or butter on the tops, then dip those in the soup and eat the beans with those. It's an easy, quick meal on some days. For me, it is a lot of days, because of my health troubles that keep me from cooking full meals more often.

Some veggies freeze up pretty decently, but some really don't. Lima beans (and brussel sprouts) are two that don't, IMHO.

I think a lot of people hate 'em cause they were served to them as kids as a side dish, like out of the can. They're terrible that way. As are boiled, previously frozen brussel sprouts like some mom's used to make.

You make up Lima Beans proper though, they're like just about every other bean.

And big, fresh brussels, marinaded a bit with some butter or olive oil & salt and pepper ... and thrown on the grill? BOMB.

I would never have believed it when I was younger. Now I love 'em. Had some tonight in fact.

Hated it when I was young, cause all I ever had was frozen, then steamed or boiled or the like. It's garbage that way ... fresh asparagus with a light marinade and simple spices, and cooked properly, is SO much better. Esp. grilled. Also great in stir-fry.

And don't even get me started on spinach ...

I favor Paulaner Salvator Doppelbock for most spicy dishes.

I'm not sure a liquid exists that complements lima beans.
