Absolutely love their Rosemary Olive Oil Quinoa. The type of olive oil you use might elevate it a bit, but it's good, good, good.
Tips: Unlike rice, you need to set the stove to medium and cover for the 20-22 minutes to cook the quinoa. It says to cook gently, and I just judge based on the amount of smokey evaporation. Near the end, I might lower the temp, but never down to a low simmer because the water doesn't totally evaporate.
The only downside is that there is barely enough for two servings. So, I am going to try to deconstruct the recipe and make it from scratch. If anyone has suggestions, please pitch in.
A bonus for this post: Here is a great, inexpensive dinner to put together that goes great with the Rosemary Olive Oil Quinoa:
Smoked Lemon Garlic Tilapia:
Mix together:
Juice from one squeezed lemon
3 minced garlic cloves
1 tsp salt
1 tsp smoked paprika
1/4 tsp pepper
1/2 tsp dried oregano
On EDIT: I think I reduced the salt to 1/2 tsp.
You can place 3 or 4 fillets in a Ziploc bag and pour the marinade over it and stick it in the refrigerator over night, but you can also just mix it all in a bowl for a few minutes before cooking. I did the latter and it was delicious. The combination of oregano, garlic cloves and smoked paprika really makes this dish.
To cook, place fillets over semi-melted butter on a flat pan. Pour the remaining marinade over the fillets and broil for 5-7 minutes.
Side dish: Easy Peasy canned peas. Add salt and pepper when it's heating up.
