Luke Skywalker, Anakin Skywalker (twice - once by Count Dooku, once by Obi_wan, and again as Darth Vader by Luke), Mace WIndu, Count Dooku, General Grievous, probably others, all get their hands cut off.

Look at sword hilts. The hilt is there to keep the blade from coming down and cutting your hand. Light sabers don't have a hilt. Jedi are always getting their hands cut off.

Which isn't really something one could use easily since you touch it you die also...
Fine, Mandalorian construction could work too.

Any how, the closest to a handguard I've seen in a saber lately is this:
