Easy Peasy Chicken 'N Dumplings

The other night were were having dinner and had a side dish of potato gnocchi.
I said "These would make good dumplings. You know, for chicken and dumplings."
Miz t. said "Damn! You're not just a pretty face, are ya? That's brilliant!"


We had it last night and it was great.
We use thighs with skin and bones and roast them in the oven first.
Really concentrates the flavor.
Than Miz t. puts the dish together in a big pot, fat drained and minus skin and bones
Yum!
