Picnic food.........

I'm on a committee for a picnic in August. I am in charge of the food. I am trying to come up with a list of foods for people to bring.

Help me!!!!

I have the usual, hot dogs, hamburgers, buns, chips, salads, what else can I add?

my mother who is of Polish heritage has been making this for years. Tonight, it finally got a name. We've always called it "that tomato, onion basil thing". Just had it the other day.

I also love homemade potato salad, and there are all different kinds of brownies (cherry, blondies, frosted, marbled, etc..), which are very portable. Homemade slaws can be very good too.

an artisan craft bowl of aged herb roasted organic young potato ensalada with a creme fraiche and basil aioli drizzle and a complementing coupling of greco currant and spice chutney to accentuate the organic ensalada's natural jus

are fairly simple, or at least, classic in fare. I always get a kick out of those way out there, posh nosh descriptions of food (organics, aiolis, and chutneys, oh my!) Give me some stick to your ribs classic picnic food and i am content.

Hmmm, ya know, I don't recall ever having potato salad with eggs! Sounds divine though, I love me some eggs, especially hard boiled, and I am pretty fond of egg salad, so to combine with potato salad sounds like a WIN-WIN in my cook book

she makes two, one with eggs and one without. She tries to please her children and grandchildren as much as possible. I prefer it with eggs.

so considerate of her. If I was one of your kin, I'd be sure to have a big helping of both kinds. Then again, i've always viewed gluttony as a virtue...especially if it gladdens the hearts of kindly mothers and grandmothers when you keep comin' back for more. In those cases, I am a proud glutton.

i can't stand hard boiled eggs and it's so sad to take a bite of potato salad and getting chunks of egg whites.

All too often, vegetarians have one or two dishes available, and everyone takes a helping... Which is great -- everyone needs more vegetables -- but means vegetarians end up with very little available food.

Gazpacho - which is served cold - could be a great picnic food - have people sip it out of cups.

Good guacamole and chips.

Maybe some sort of couscous dish with veggies tossed in ... always good for vegetarians.

Any kind.

Something else that might be fun is to borrow an old-fashioned ice cream maker and make some fresh strawberry ice cream. Yum!

Get a box of Sugar Frosted Flake Cereal and pulverize them with a rolling pin or bottle, whatever...Use that as a coating and I have an electric skillet that I pour an inch or so of good oil (grapeseed works the best I've found) and put them in...of course you have to watch (make sure it's about 360 degrees) and turn them over, it is time consuming but the results are SO good! The sugar caramelizes and seals the chicken pieces so they are still juicy (as in not dry) inside but the crust is crunchy and sweet! And they taste better cold than reheated, believe me...this is kind of a secret recipe I stumbled upon.

fruit salad, desserts of any kinds, chips, snacks, soft drinks, coffee, alcohol + mixers if permitted, and ice. Lots of ice.

For the flies, ants, wasps, black flies, mosquitoes, etc.,

As much as I like to spend most of my time outdoors, I don't eat there.

I will barbecue outside, or cook on a fire - but eat inside unless it's late summer and the bugs have all gone away.

The smallest bit of food spilled on the ground will have wasps and ants around for days.

And when I want to eat, I want to eat - not spend half my time chasing insects away.

Even a screened in gazebo will not keep them away - bugs will sneak in every time you open the screen, and ants are already there.

When outside with beer, I keep a cover handy to put over it because swallowing a fly or other insect sorta ruins the experience.

If you're not in bug country, no problem.

I'll assume you have embellishments like onions/tomato/cheese/garlic and other spices - dessert - ice cream if you have enough refrigeration. (12 volt coolers) with cones if ya got kids along - never knew a kid who don't like ice cream cones.
