(3,702 posts)boiled eggs, Miracle Whip (not mayo because I was raised on MW), a squirt of honey mustard and some chopped onions. A little salt and pepper too. My mom gets all fancy with celery... but I like just the basics.
I get a little finicky - some places make it too watery, too many flavors, too something... I would rather have my own batch than anyone else's.
pair it with some tomato soup and I am in heaven!

(115,103 posts)I'm not the most intuitive person when it comes to food, so I don't tend to take a lot of chances myself. I like hearing variations and trying the ones other people have tested, and there are sooooo many variations for all these simple standards. (And btw, I'm another MW fan myself.

(1,296 posts)for a smooth consistency and then throw in a bit of relish and relish juice - not much - just enough to taste - add a small dash of white pepper and sugar, whip it up, fill the egg white shells and sprinkle with paprika (fancy) and top with a slice of green olive (schmancy)
Variation: Pickle juice if I am out of relish for that extra twang/vinegar element.

(206,072 posts)I put hard cooked eggs in a bowl and cut them up, making the chunks smaller and smaller by pressing the eggs through the tines of the fork. Then I add mayo (Hellman's ), salt and pepper to taste and I'm done. The amount of mayo depends on who I'm making it for. Some folks are mayo lovers. I'm not big on onions in it, but I'm usually okay with most egg salad unless it has really large chunks.
When I've been in the hospital, I haven't been a big fan of the food. But after my last surgery they gave me a choice of a snack, soup and a sandwich or a dinner. I opted for the soup and sandwich, turned out to be potato soup and an egg salad sandwich. One of my favorite meals, ever!

(21,046 posts)Six hardboiled eggs, peeled and rinsed;
One large can of chunk light tuna packed in water, drained;
2 medium to large Gala or Red Delicious apples, chopped in small pieces. Do not peel;
3 big spoon globs of mayonnaise;
Sea salt to taste;
Salt-free Spike to taste;
one shake of garlic powder;
two shakes of parsley flakes.
Mix well and chill.

Have you ever tried taking a can of tuna and adding just a few drops of *liquid smoke"? I don't know exactly what is IN Liquid Smoke, as I don't use it that often...but the combination does make for an inexpensive hors d'oeuvres for spreading on unsalted crackers.

(4,549 posts)GERD has led me to vegetarianism. It was a choice between the meat and the spicy, and I chose the spicy.
