If you told me I was going to die tomorrow and asked me what I wanted to eat tonight, I'd say "roasted chicken."
My favorite way to do a roast chicken is to marinate it for a full day in white wine, olive oil, rosemary, garlic and onions (salt & pepper, of course).
Then I cut a lemon in half and stuff it into the cavity of the bird and roast away.
The carcass makes the most amazing chicken stock.
I've also been known to gently lift the skin on the breast up and layer things under it like thinly sliced ginger or thinly sliced jalapenos.
Versatile food. Delicious and easy to cook.
Let's hear it for CHICKEN!

I've also been making chicken/vege egg rolls by putting one chicken breast in the food processor and then sauteing it with all the veges like cabbage, shredded carrots, etc. So good.
Chicken is so versatile and yummy.

(10,893 posts)KFC is #1 in my book as far as fried chicken goes. It's too bad that there are apparently no KFCs in Humboldt County where I am staying. I think there is a Church's in Eureka, but their chicken IMO tastes generic compared to KFC. Most of the stuff at Church's chicken is way greasier, and the skin tastes weird. I do like their biscuits, though.

on edit: panko crusted, pan fried in olive oil with rice and cream of mushroom soup...yummy too!

Fried Chicken is so awesome if done well. Heck, I wanted to do a Fried Chicken Restaurant crawl in the DMV.
