Chicken salad chain to open first location in Jacksonville

A new fast-casual restaurant called Chicken Salad Chick is planning its first Jacksonville location in the Reedy Branch Commons shopping center on Baymeadows Road near I-295.

It features 15 flavors of chicken salad, along with soups, salads and desserts.

Their apricot chicken salad was heavenly. I took the recipe home with me but have never made it...17 ingredients...

But the recipe that was a big favorite, so we had that one every day while alternating the others?
Just plain old chicken breast pulled off the bone, with a bit of celery, low-fat mayonnaise, and salt and pepper.
That was it. Outsold every thing else by a huge margin.
