Is there a law that mall food courts must have a "Bourbon Chicken" restaurant?

Every other thing in a mall food court is something you see elsewhere: gyros, pizza, tacos, burgers, Chinese. But "bourbon chicken" or "cajun chicken" is as far as I've seen only found in mall food courts.

I can't swear that I've ever seen somebody in line for it (there's no need, since they shove a little piece of chicken on a toothpick in your face every time you walk by).

I'm not clear what about the sauce is "bourbon" or "cajun"; it seems like soy sauce and brown sugar.

Despite being branded as "cajun" and having jambalaya as a side, they are invariable run by people of East Asian descent.

What is the history of the Bourbon Chicken stall? Why is it in food courts, and nowhere else?

The heart of Suburbia I'll PM once we're all moved in. The couch is supposed to come today but it looks like that's not going to happen.

Also, it's hotter today in DC than Mumbai. That's just messed up.

they need something to differentiate their stir fried chicken and rice dishes from the others.

I don't trust mall food courts anymore. They are just nasty, greasy, and who knows how old their ingredients are.

but I haven't eaten there for about 2 years. I found flavor packets and made it at home a couple of times.

But the one in franklin, ohio is nasty. People getting food with their hands, kids playing in the chocolate fountain. We've changed its name to. Golden Trough

Used to see Tandoori Chicken joints in mall food courts all over until the Bourbon brood revolution. A fowl scene that was, a total fustercluck.
