Pumpkin Pie Ice Cream!!

Had some recently - lucky that the ice cream shop was located near the pumpkin display left over from Halloween...pumpkin ice cream - anything pumpkin, really - makes me so happy!!

Pumpkin Cobbler

Mix together:

1 16 oz. can pumpkin
4 eggs
1 can sweetened condensed milk
pumpkin pie spices to taste

Pour into a 9 X 13 baking dish.

Distribute evenly over top:

1 box yellow cake mix (dry, straight out of the box)
1 cup chopped nuts
2 sticks melted butter

Bake at 350F for about 45 minutes, until top is nicely browned. Serve warm with whipped cream or ice cream.

Yummy, yummy, yummy!

The brand is Three Twins Organic....it's also sold in some grocery stores (not sure about the pumpkin flavor) but their Lemon Cookie flavor is to die for as well!!

looks yummy... makes me remember a wedding I went to years ago; on Halloween and it was a costume dress up affair... lots of pumpkin ice cream and homemade beer flowed
