Follow-up: Ex-Collin Street Bakery controller pleads guilty to embezzling $16M from historic bakery

Sandy Jenkins, the longtime corporate controller for Corsicana’s Collin Street Bakery arrested last year, has pleaded guilty to three felony counts stemming from accusations that he embezzled $16 million to fund a lavish lifestyle.

Jenkins, who was indicted last September, pleaded guilty to one count of mail fraud, one count of conspiracy to commit money laundering and one count of making a false statement to a financial institution. The factual resume and plea agreement were filed in April; U.S. Magistrate Judge Renée Harris Toliver made it official in Dallas federal court yesterday.

The U.S. Attorney’s Office says Jenkins has also agreed to pay back the $16,649,786 he embezzled during his tenure as the bakery’s chief bookkeeper. Jenkins has previously pleaded not guilty to 10 counts of mail fraud.

His plea deal does not include Jenkins’ wife Kay, who was also indicted in March on one count of conspiracy to commit money laundering, six counts of money laundering and aiding and abetting, and two counts of making a false statement to a financial institution. She remains on bond, as her trial is set for August 25.
