"The winner has created a pizza with both love and passion, and with a great respect for the ingredients. The winner has pushed the pizza into the top echelons of modern gastronomy," said jury member Tommy Myllymäki in a statement.
Karlsson, who plies his trade as chef at Speceriet in central Stockholm, won with his creation entitled "Tarte flambé à la Karlsson".
The young Stockholmer beat off the challenge of Frida Ceveryd from Stantons in Varberg and Adem Tokmak from Vapiano to win the finals held at Kungsträdgården in central Stockholm on Wednesday.
Ceveryd competed with "Horseradish luxury" and Tokmark produced "Vitello con Ruccola".
The finalists were selected after a countrywide search for the best candidates and were instructed to make their speciality pizza as well as a more orthodox recipe.
The jury was led by Myllymäki, runner-up in the world chef championships, and Tom Sjöstedt, winner of chef of the year 2008. The panel was completed by 2011 pizza champ Tony Gerasovski and international celebrity chef Michel Arvblom.
