We started the Engine 2 28 day vegan challenge yesterday....

So this morning was my first experience with almond milk on the morning cereal - just fine!

Tonight - made a great dish - vegan Farro Jambalaya....loved it (found it on the web). Last night a Butternut Squash soup.

So far, so good.....though I need to work on getting enough calories/protein each day - definitely on the learning curve.

1. You will get enough calories, and don't worry at all about the protein.

There is more than enough protein in starches (potatoes, brown rice, whole grain pasta, etc...) combined with your choice of vegetables and fruits, to meet your protein requirements and then some.

mostly my wife is trying to get her cholesterol down without resorting to meds. I lost 50 lb last year on Weight Watcher, now want to finish it off (another 20 lbs) but thought joining her on the journey will be as good for me as for her.

I won't miss meat. Seafood - yes....but we didn't eat it all that often anyway.

Pacific brand Almond Milk (vanilla, unsweetened) is my favorite.


I am still 'clinging' to my olive oil... but for the most part have been eating this... it feels great!
