Heat is heat. The factor to be aware of is dilution, such as with water (ie, boiling).

But I could be wrong.

Same for fats. And heat does degrade some nutrients over time.

if you want to retain vitamin content. Boiling is what leaches the water soluble vitamins out of your veggies. Vitamin loss isn't huge, but it's measurable. If you want all the vitamins you paid for, steam, roast or grill those veggies.
