Onion chopped medium
Olive oil
Red lentils 1 cup
Cumin to taste
S/P
Water or chicken broth 6 cups add more as needed
Lemon juice. To taste

Yogurt makes a good topping.

I also drank some coffee and some ginger lemon tea

I think this is the start of something good.i

CARROT SOUP WITH BASIL, CREAMY THAI

PRINT FRIENDLY VERSION
Prep time
5 mins
Cook time
25 mins
Total time
30 mins

Thai-inspired, 7 ingredient, 30-minute carrot soup that’s creamy, vegan + gluten free, perfectly sweet and spicy and so delicious.
Author: Minimalist Baker
Recipe type: Soup, Entree
Cuisine: Vegan, Gluten Free, Thai
Serves: 4
Ingredients
1/2 1 large yellow onion, chopped
3 cloves garlic, diced
1 pound carrots, scrubbed (or peeled) and chopped (~4 cups)
Salt and Pepper
2 cups Veggie Stock + 2 cups water
1/3 cup creamy or crunchy salted natural peanut butter (use less for a less intense PB flavor)
2 tsp chili garlic sauce (use less for less spice)
TOPPINGS: Fresh basil, cilantro, or mint; coconut milk; brown sugar or agave nectar (sub honey if not vegan); Sriracha hot sauce
(NOT LISTED: Coconut or Olive Oil for sauteing)
Instructions
Heat a large pot over medium heat.
Dice onion and garlic. Add to pot with 1 Tbsp coconut or olive oil (or nonstick spray). Add carrots and cook for 5 minutes.
Season with a healthy pinch each salt and pepper, then add veggie stock and 2 cups of water and stir.
Bring to a low boil, then reduce heat to a simmer. Cover and cook for 20 minutes, or until veggies are tender (test by cutting a larger piece of carrot in half – it should cut with ease).
Transfer to a blender (or use an immersion blender) and blend until smooth and creamy. (Cover with a towel in case your lid leaks any soup while blending.)
Add peanut butter and chili garlic sauce to the blender and blend to combine, using a ‘puree’ or ‘liquify’ setting if you have it.
Taste and adjust seasonings as needed. For a touch of added sweetness, add a Tbsp or so of brown sugar, maple syrup or agave nectar (or honey if not vegan). Add more chili garlic sauce for more heat.
Serve immediately with fresh basil or herbs of choice. A drizzle of coconut milk will add a creamy, sweet touch. Serve with sriracha for extra heat.

I take a pain pill shortly before heading off to bed. The heat is causing my face to swell. The new sleeping time is helping my face though.

It doesn't add much in the way of flavor, but it is an excellent anti-inflammatory. And it does make the food very pretty.

Also, Garam-masala adds some amazing flavors.

I had my last chemo yesterday, and already stuff tastes bad. I'm looking forward to three weeks from now, when I begin to get this poison yuck out of my body.

First I get my mastectomy, and based on the biopsy, they'll decide whether I need it.

I've not enjoyed chemo, but I got Neulasta, and even though last cycle I got an infection and then had to get a blood transfusion, I'm managing. just have to get through the next ten days or so...I get diarrhea, acid indigestion, and fatigue.

I get my blood workups often, because my chemo makes me anemic and knocks down my magnesium.
The blood transfusion sounds worse than it was, sorta like a normal infusion, except that I was in a hospital bed.

My biggest complaint about all of it is that when I started out, I was told NO over-the-counter meds without approval. Well, they just as easily could have said Tylenol, Imodium, Claritin, etc. are all okay if you need them. They treat the patient as though she's a moron, who, if you say, "well, you might experience this or that side effect," that it WILL happen. I like being prepared and I don't like having to wonder why things happen (like that nobody said getting IV magnesium would give me diarrhea).

I'm so close to the end of chemo now that I'm not even worrying about this stuff any more. I have Protonix, anti-nausea meds, Lomotil, and I'm taking Benefiber, a probiotic, and eating yogurt every day. Digestion has been my worst problem and I'm doing everything I can to make the next ten days tolerable. I even have Rush Limbaugh happy meds, in case I need to just sail away for a few hours.

Then I plan to celebrate with a great big Pina Colada (as soon as that's okay)!

I had been making my husband a soup similar to what you described...I need to get back to that soon!

I have my Zoloft, that has kept things on an even keel.
I have a liquid happy pill, but I'm not into downers.

Did the chemo take your hair? I lost my beard soon after beginning radiation. I've had a beard since Aug 1969 when I left the army. What a shock.

I wear it whenever I go out (except for the long sessions at chemo). Still have a spiky crew cut, about 1/3 hasn't fallen out yet. My fingernails look strange. And I'm at my skinny weight...seven years ago, I worked like hell to be here.
Interesting -- thanks to that transfusion, I feel that I can deal with this last one a lot better.
I know you've had it very hard, and I salute you for your courage.
