so I looked up a few recipes and I'm thinking it's something I'd enjoy on toast or a bagel.

I think this one is my favorite...going to try it out either here or when I go to my parents on Tuesday.

I would not add all the liquid at first. Use some to adjust the consistency.

I have since found a recipe that I have tried with good results. The quantities are small because I like to make in small batches because not many here to eat it.

15 oz Canned Pumpkin
1/2 cup Brown Sugar, packed
1/2 cup juice, either apple or orange (dont add all at the beginning)
1 tsp Vanilla
1/8 tsp cinnamon (more per taste)
1 tsp Pumpkin Pie Spice

Mix ingredients
Bring to a boil and reduce heat and simmer for 30 -40 min (or put in a crock pot for an hour on low)
Add additional liquid as needed to get the consistency you like.

I will try adding a little bourbon on my next batch.
