Just made fresh horseradish

My husband dug up a root and broke it while transplanting, so we followed directions and grated it and added water,vinegar and salt. Now have this jar of stuff strong enough to knock your socks off. Any ideas for its use? This is the first time we have it, husband says he loved it as a kid but can't remember what exactly they did with it.

Had a nice beef roast tonight as is cooler here today (just up to 70), figured good day to put roast in. So I can have it with the leftovers, great!

Where can one find horseradish plants, heard that it does not do well from seeds??

It took off like mad, that is why we are transplanting some here and there. Soon will be leaving it on doorsteps like zuccini!

minced & pureed with a cream type base - great on beef or as a seafood dip - blended with ginger & ketchup.

Horseradish Sauce Recipe I've tried this, but not mine, from: http://www.simplyrecipes.com/recipes/horseradish_sauce/
Add to shopping list
INGREDIENTS
3 Tbsp prepared horseradish (here's how to make prepared horseradish)
1/4 cup sour cream
1 teaspoon Dijon mustard
1 Tbsp mayonnaise
1 Tbsp chopped chives or the greens of a green onion
METHOD
Mix ingredients together. Serve as a sauce for steak or pork.
Makes about 1/2 a cup.

I will give that a try. I though I had read somewhere about mixing it with mayonnaise, sounds like it would be good.

You can mix it into a

Salmon loaf (cooked flaked salmon, dill, potato flakes or left over mashed potatoes, an egg, a tbls (or less if really hot) of horseradish and 1/8 to 1/4 c. of ketchup - mix together until it holds a loaf shape, coat w/ ketchup and bake at 350 for 30 min.) Everything is to taste, but I usually start with 2 cans of salmon and 1/2 cup of potato flakes. If you use real mashed potatoes, you may not need the egg for binding.

OR

Salmon spread (1 can salmon, flaked, 1 large bar of cream cheese, 1 Tbls horseradish, drop of liquid smoke - mix together and chill. Garnish with dill sprigs or sprinkle top with dill). Great with crackers, as a topping for cucumber slices, or to fill celery stalks.

I have leftover mashed potato's from tonights roast beef supper. I can use them in loaf. I am still using potato's from our last years garden. About half a bushel left to go! I can't believe they have kept firm this long. Of course we have an old cellar, not basement, so that probably helps.

it's something I grew up with and loved as a kid, and my kids like it.

Just combine very well drained cooked spinach with sour cream and a little horseradish. For a 10 oz. package of frozen spinach or its equivalent, maybe 1/3 cup sour cream and a half to one teaspoon of horseradish, I'm thinking.
