Another kitchen day

I made a loaf of almond flour zucchini bread, which turned out pretty good. I used monk fruit for the sweetener and date syrup instead of honey. Right now, I have a zucchini casserole finishing, which is good by itself, or a nice side with any veggies. I am cutting green peppers to freeze, should have enough to last into January. I don't know if I'll get to blanch and freeze the zucchini today, but we'll see. I'd like to make some fresh cucumber kimchi, but the cukes are pretty tasty on their own.
