(39,961 posts)I also have a salad with decent fixings and a rice. I'm thinking of making my lime salsa rice to go with the lime coating on the fish, but sometimes it's more fun to make tastes clash a bit. That's on the menu, though, and I'm pretty committed to it unless something goes completely awry.

(26,117 posts)so I made bean soup with leftover white beans, gumbo mix and mac and cheese. Oh, and a little spinach. Quite tasty so far.
My last successful run of meals was getting 9 meals out of red beans and rice and a Costco rotisserie chicken. Could have gotten more, but I stupidly forgot and left some rice and beans out on the counter overnight.
