What's for Dinner, Wed., Jan. 10, 2024

I'm having mini-meals today and will probably continue to do so as I am busy doing property cleanup from the storm.

One that I'll have around dinner time is my black bean salad that I made a day or two ago from a Cookie and Kate recipe. I have loaded it up with toppings such as fresh avocado, scooped right out of the shell, and goat cheese. Dabs of tomato pesto. In addition, toasted pepitas. I had a taste and yum! Gonna' be good.

I'm following the Dr. Greger app called the Daily Dozen, which is making it really easy to make sure I get the healthy items. I really like this app because it cuts down on cooking time. Like, for example, they want you to have berries so hey, how much trouble is it to wash some berries? Nothing too difficult there.

Yesterday I also roasted some cubed rutabaga. I'll have some of the rutabaga later tonight, sprinkled with urfa, a kind of Turkish pepper.

For dessert, an apple blossom. Decaf coffee.

2. Steak and Eggs

Scrambled the eggs with onion, mushroom, and cheddar. The steak was thin sliced ribeye, seasoned with salt, garlic powder, pepper, and thyme. Two mini slices of gluten free sweet Hawaiian bread. A couple diced yellow and red grape tomatoes on the side.

For dessert: Blueberry and banana smoothie with one strawberry (I'm not a huge strawberry fan, lol. One is perfect, adds just the right hint of extra flavor). A little cinnamon and brown sugar to sweeten the milk. I've started keeping the bananas in the freezer with the berries. They work great in smoothies, even better than when not frozen.

I sure missed having soup. Worked through the leftovers from the holidays.

It's wet and chilly in the Catskills so we've been playing with a pot of chili since lunch time.

Ground beef, chopped onions, chopped green peppers, chopped Jalapeño peppers, crushed tomatoes, tomato paste and a whole bunch of spices.

Dinner rolls with butter and homemade cole slaw.

was going to make chili verde, but there were too many leftovers from yesterday and the day before, so dinner ended up being the last of the leek and potato soup, with a green salad and some fresh sourdough
