What's for Dinner, Tues., Jan. 16, 2024

Appetizer is cold vegetable plate with carrots, celery, cornichons, banana pepper rings, and black and green olives. New jar of mango pickle! A few crackers on the side. Chipotle veggie dip. Has lime, garlic, ranch dressing, and green onions in it.

Chicken breast sandwich on crusty roll with avocado, turkey bacon, mayo.

My vegetable soup broth should be about ready soon, so I'll add some spinach tortellini to it.

Dessert: spicy chai tea and a few Werther's.

Chicken piccata with a lush lemon/butter/white wine sauce with lots of capers. Served with roasted red potatoes and steamed broccoli. Pinot Grigio and lemon ice water. Lemon sorbet for dessert.

The powdery snow has been clinging to the mountain trees all day. We've got about 5-6" of snow and it's lovely. As dusk settles in, I'll turn on the flood lights to illuminate the forrest.

My mom made this a very long time ago (60's? 70's), and it has been my favorite casserole ever since. Takes awhile to put together but is a wonderful taste and great left over.
