1. Chicken thighs

They are on the counter defrosting while I think about what to do with them.

Already made some mashed potatoes to go with the chicken because I’m hungry and wanted to scrape the pan for a little tide-me-over snack. Either oven roasted carrots or sautéed spinach… maybe a little of both.

For dessert: Brownies I baked last night.

I’ve been thinking of trying this for a while. Into the rice cooker went a cup of short-grain rice with the requisite water and a splash of soy sauce and mirin. On top went sautéed shiitake mushrooms, shelled edamame, a carrot reduced to matchsticks, and a can of aburaage cut into slices. Pressed the start button, waited an hour, and stirred it up. Pretty tasty and easy, but it made a lot, so I’ll be eating it all week.

involving taking a dog to an emergency vet 45 miles away--he is fine, yay!--we got takeout pizza. Works for me. (We very rarely, a few times a year, get pizza, so this is fun for me...)
