What's for Dinner, Fri., March 15, 2024

Coconut shrimp. Sauces are apricot preserves, sweet-and-sour sauce, hoisin, and Dijon mustard.

Grapefruit and avocado salad using tossed greens. Toasted sliced almonds on top.

Side dish is yellow crookneck squash zoodles with goat cheese.

Dessert: chocolate cheesecake with decaf.

Pasta primavera with a simple garlic,
Olive oil and
Parsley treatment. And crushed pepper of course.
Salad of
Mixed
Greens with olive
Oil and rice wine vinegar.
Dessert - not sure yet!

with braised broccoli.
Onion, carrot, celery, garlic, red wine, chicken broth, bay leaf and thyme sprigs for gravy. Fat skimmed and reduced.
Only salt and pepper for the browning.

Scungilli Fra Diavolo

Chop up a couple cloves of garlic and mince a small onion. Saute in olive oil. When they're done add crushed tomatoes and a cup of whatever wine you've got on hand. Lastly toss in the scungilli (fresh is best but canned is excellent). Spice to taste with hot pepper flakes. When warm enough serve over pasta; tonight, we're having perciatelli.

Big mixed greens salad and garlic bread along with some chianti.

Asparagus (cold) with Wasabi cream sauce
Orange/Red Onion/Kalmata salad
Hard rolls and butter
Iced tea

Green salad with warm, roasted corn, tomatoes, black beans, onions, garlic, feta
Side of local butternut squash

from a 1930s recipe. layers of hamburg onion butter and potato. Very simple but found it surprisingly good.

blueberries, and some fresh vegetables. That was yesterday.

I wasn't feeling good Wed. After I took Azo, and the symptoms eased, I knew it was a UTI, so I went to Physicians' Care early Th. and got diagnosed for sure. I got antibiotics. My dear daughter came over with the food I mentioned and as a super bonus, brought my granddaughter along to spend the night. I wasn't that sick, but I felt cherished. I rented The Princess Bride and we watched before bedtime. We had it on when she was 3, but she didn't remember it.

I wasn't that hungry yesterday, so I just had some soup and some blueberries. I ate some of the chicken and more soup today. Still good weather for soup

Edited to add, my local Vietnamese takeout place is doing 15% off for St Patrick's Day.
