Mom brought me awesome cake! Coca Cola Cake Recipe

I’ll admit, I side-eyed both her and the container of cake she brought over the other day… later that night I texted her for the recipe.
It was sooo good!

1 cup Coke
1/2 cup oil
1 stick of butter
3 Tbsp. cocoa powder
2 cups sugar
2 cups flour
1/2 tsp. salt
2 eggs
1/2 cup buttermilk*
1 tsp. baking soda
1 tsp. vanilla

-Preheat oven to 350. Prepare greased, lightly floured 13x9.
-In a saucepan combine and bring the Coke, oil, butter, and cocoa to a boil.
-In a large bowl combine sugar, flour, and salt.
-Pour boiling Coke mixture into the flour mixture and beat well.
-Add eggs, buttermilk, baking soda, and vanilla. Beat well.
-Pour into prepared pan.
-Bake 20-25 min.
-Remove from pan and cool for 10 min.

Frosting:
1 stick butter
3 Tbsp. cocoa powder
6 Tbsp. milk
1 tsp. vanilla
3 & 3/4 cups powdered sugar

-Heat butter, cocoa powder, and milk till the butter is melted.
-Beat in everything else then spread on cake while still warm


*Mom said, I quote, “Screw buying buttermilk. Take a cup of milk, add a tablespoon of white vinegar, let it sit for 3 minutes. Use a half cup for the recipe and throw the rest out. You can use lemon juice if you don’t have any vinegar.”

Why not 1/2 cup milk and 1/2 TB. vinegar? No idea, but I’ll do it like she said because she said so. Also the directions are brief because it’s from my Mom. I actually expanded them some for clarity- you all should see the non-baked goods recipes she sends! The ingredient amount descriptions are amazing and very entertaining. It drives my “Type A” hyper-organized sister and youngest niece nuts, lol! Mom and Grandma are a big “eh, just eyeball it” cooks (except when baking) and I inherited that from them. ❤️

Also: I double checked with her and yes, the baking soda goes in when the eggs, milk, and vanilla do. It must have something to do with the Coke and a potential fizzy reaction, I’d guess?

My gran gave instructions like "sprinkle a teaspoon of salt on the steak then brush most of it off."

I have used it well past the use by date. It already tastes bad imo so I could never tell if it was ruined.

It can keep for two months at least.
I also can never figure out if it's "gone off" ... unless there's mould.

Also buttermilk pie which is in a class by itself, and quite decadent.

Love it with stale cornbread crumbled up in it - eaten with a spoon.

In deciding on a cake recipe, the first thing I look for is buttermilk. The second thing is separating the eggs and whipping up the whites to fold into the batter. These two things really add to the end result. Some of the best cake recipes which use these two things : German Chocolate, Italian Cream and Red Velvet.
