What's for Dinner, Tues., March 26, 2024

Turkey kabobs and arugula salad.

I had a fresh pineapple which had ripened, so I was looking for ways to use it (besides in kombucha). I came up with this: turkey, pineapple, bell peppers, and red onion on a kabob.

The marinade for the turkey was sesame oil, ginger, S&P. Agave and soy sauce, too.

Arugula from garden. Toasted pignolis and shaved parmesan. I made olive oil-lemon-vinaigrette. There is nothing like fresh arugula!! Some is starting to go to seed, though. My patch is only two years old and it just amazes me that all I did was go out and throw some seeds on a raised bed and I've had regular salads from it during the season for a couple years.

Kombucha: pineapple-peach.

Dessert is gonna' be something with chocolate. I will have to go out for this.

1. Leftover stew

Still working on the Sunday bean stew, but I just put in a pan of jalapeno, cheddar, sundried tomato, and dried kale cornbread. Comes out red, green, and golden. I'm also a big fan of arugula, it goes in most all my stews.

I haven't tried that yet but I remember years ago I stopped at a brick oven pizza place and they had a pie with fresh arugula on top. Of course I ordered it. Gotta' try to duplicate that one sometime soon.

On the stews, I guess the guideline for putting in arugula would be for a bitter green?

I harvest and process it coarsley chopped with olive oil. Freeze it in small bags. I usually add to stew when I turn down to low heat. Let it simmer for a few hours to marry the flavors. I think it is mellowed nicely by basil. The beauty of frozen in olive oil is; I can toss it still frozen in a saute towards the end for a powerful taste.

I made meatloaf earlier today. Stopped at Aldi and got some buns.
