(12,254 posts)A little dish of brown Basmati rice and a salad. I baked a free-form phyllo pie this morning using a peach and a half that couldn't wait for the weekend. I used home made vanilla sugar in the tart. That should hold us until breakfast.

I bought these rubbermaid produce keepers, but it's still all going bad so quickly. The little store in the only town must get shipments only of food that is 24 hours away from total spoilage.
It's so frustrating!!
I bring this up because I had three beautiful peaches that, I swear, rotted overnight. And because I am super jealous of your peach pie.

(12,254 posts)I bought a whole bunch of produce at a farm stand that went bad in a day and a half. I took back some of the items for a refund and had to listen to a lecture. I did get a partial refund, but the attitude was, 'you shouldn't have bought more than you could eat in one day.' I don't shop there any more. Might this have something to do with your warm-ish refrigerator?

(146,218 posts)My fridge is actually very good, so I don't think that is it. I just think they send stuff they are about to toss over to the island, since we have absolutely no shopping options.
Oh, well. We will make do!

(12,254 posts)They hold potatoes in the back improperly and put them out when they are green for a 1/4 inch under the skin. Luckily, they have a no-questions-asked policy for returning bad produce and it's only a 1/2 mile away so I can walk it there when I must. The peach and a half I used in the pie were only two days old, but already going. I know better than to buy any of their marked down produce there because that is a losing proposition altogether. Of course, we make do. That's how all good cooks operate!

Just picked up my cantaloupe and it is totally rotten at one end. And only 4 days old.
And you are right about making do. I am going to cull through and save everything I can today and use if as quickly as possible!

(12,254 posts)She has a similar trek to the grocery. I like living where I can get to everything on foot or by public transportation. It's definitely not worth it for you to waste all that gas for a refund on a cantaloupe.

(12,254 posts)I read a recipe for roasted cauliflower with date syrup today. Mr. Pup is crazy about cauliflower and I will certainly give it a go if I can find date syrup. Do you use date syrup? If so, where do you get it? I don't think I've ever seen it before. (of course, I've never looked for it before either)

(12,254 posts)Roasted head of cauliflower broken into florets after a drizzling of olive oil, salt and pepper. After cauliflower browns in spots (20 min. approx.) put it in a bowl and drizzle with tahini (1/4 C), date syrup (2 Tbsp.), and lemon juice (2 Tbsp) with leave to add more OO and lemon juice if desired. After I posted the question, I noticed that I can find date syrup in a Middle Eastern market. Doesn't that sound good?

Zucchini Pie
1/2 c. cheddar cheese, grated
3 c. shredded zucchini
1 c. Bisquick
1/2 c. veg. oil
1 T. parsley
3 large eggs
salt and pepper to taste
Preheat the oven to 375 F. Mix the cheese, zucchini, Bisquick, veg. oil and parsley together. Beat the eggs and add to this mixture. Mix well. Add salt and pepper to taste.
Pour mixture into an oiled 8"x8" pan and bake for 40 minutes.

(146,218 posts)The water is clear and relatively warm (it never really warms up), but we have kelp forests and some reefs/rocks where all the beautiful little fish hide.
I don't like deep water either, but I stay close to the boat and just paddle around being amazed.
It's a pretty perfect swimming spot.

(146,218 posts)Have you ever been to Catalina or any of the other Channel Islands? The hiking is outstanding and 90% of the island is completely uninhabited.

(22,165 posts)But we never went out to Catalina! We went to the Channel Islands several times. So remote and incredible. I don't have any pics in photobucket that I can post and I have to scan them in first. We loved it there.
I miss southern CA this time of year. My favorite time of year in the mountains... .

I hope you get to come back out this way sometime. I like the spring the best, when there is green and the hills are covered with wildflowers.
But for the water, this is the perfect time.

(22,165 posts)Fall is my favorite time in PA as well, I think I was nostalgic for Fall when we lived in CA and being up in the mountains reminded me of home.

(50,130 posts)But I am locked into making a corned beef hash at this point. If it were cooler, we would walk to the Mexican restaurant down the way. It's not too bad in here, even without AC. Doesn't get to 80, even though it's 92 outside.
I was going to do some canning. That will have to wait.

Top with drained canned peaches, whipped cream, cinnamon and fresh mint.

We have a huge crop of Cubanelles in the garden so I stuffed a few of the larger ones with a ground beef and rice stuffing. My stomach seems to tolerate thin-skinned peppers better than it does the thicker bell peppers.
