(50,130 posts)I'm sitting on about ten pounds of apples and have a LOT of applesauce already. Was thinking about making apple butter; the vintage New England cookbooks call for cider in the recipe.

(28,791 posts)I just used a mix of reds, galas, grannys and the few nasty little ugly apples that have dropped from my own trees already (bad spots removed).
4 cups applesauce (just apples and a little water to get them started)
2 cups sugar
2 t. cinnamon
1 t. nutmeg
1 t. cloves
1/8 t. cardamom (instead of the allspice the recipe listed.)
I doubled the batch and used the crock pot to cook it down. yuuuummmmyyyy

(11,364 posts)... called for boiling down cider. Since I didn't have a good source for cider, and it seemed like a waste of good cider to boil it down, I substituted frozen concentrated apple juice. It worked quite well, and I've used it ever since.

(28,791 posts)I haven't had those in years Just picked the apples from my 1 good tree, they are HUGE. I really don't think most would fit into a jar. I might have to use pieces.
I think the tree tapped in to a spring cause some of the biggest have water core even though we haven't had rain for 2 months. on the plus side they are super sweet

After 40 years of canning I finally actually bought a really good book about canning and contained recipes of things I had no idea you could can. The book: "Ball Blue Book Guide to Preserving."
It includes a huge amount of information not only canning but freezing and drying foods.
