I am going to make beef enchiladas with a tomatillo sauce, beans and rice with tomatoes and fruit/avocado salad to cool everything off.
I also have some boxed wine, so could make a sangria.
Leaving dessert up to the guests.
Should be fun!

(29,098 posts)I'm going to steam them then toss with a little EVOO and garlic. I'll also probably cook a bit of salmon for myself. SO is still eating the Corned Beef I made days ago...I think that's the last of it though. I also have some asparagus that is getting old so I might just turn that into a quickie soup with a wedge of laughing cow

(32,086 posts)Black beans, corn, halved grape tomatoes, chopped avocado, EVOO, cilantro, garlic and some cayenne. I meant to add some minced jalapenos, rather than the cayenne, but I had a brain fart. I'll just save those for some fresh salsa.

(16,334 posts)I should have broiled it but decided to fry it crispy instead. It was pretty good but a little on the sweet side.

(14,487 posts)Whole wheat pita crust. Lightly spread a tablespoon of Bertolli pesto. Placed a half dozen fresh basil leaves, and then a bunch of fresh baby spinach. Added a handful of mushroom slices. Used my Pampered Chef garlic slicer to add a couple medium cloves of fresh garlic. Sliced a fresh tomato. Sprinkle of sea salt and red pepper flakes. Topped with a handful of fresh grated part skim mozzarella. 10 minutes in the toaster oven.
OMG was it good!!!

(22,271 posts)I was the beneficiary of a LOT of donated food Wednesday and Thursday (Yay!) and have been sorting through everything. I got free flour tortillas (I don't usually buy these but I can eat almost anything if it's free) and had some ground beef, cheese, salsa that I canned earlier in the season, pickled peppers from the garden and donated onions and shredded lettuce. All of that made burritos. I had some leftover brown rice and some leftover marinara sauce so I sauteed onion, bell peppers and garlic, mixed the marinara sauce in with the rice and got a sort of Italian/Mexican rice conglomeration. It worked. I also had some vegetarian black beans I had made some time back and froze.
All in all I ended up with several meals at probably less than 20 cents per meal and when you have a miniscule grocery budget like mine it literally makes all the difference.
