I cook (short grain) rice in coconut milk, but hadn't thought of cooking couscous that way. The cardamom sounds like a good way to go too.

I really like this recipe, and am a huge couscous fan but one thing id be worried about is the pomegranate seeds can be tough on the teeth. This might clash a little with the delicate couscous texture but i am definetly gonna try it anyways.

You'll find the Pomegranate seeds soften just a little and aren't a problem.
