Brown about a half pound of chorizo. drain and set aside.
Chop up a medium onion, half a dozen jalapenos, a handufl of tortilla chips, and a small tomato and saute until soft.
Scramble up half a dozen eggs and pour into skillet with all the other ingredients. Stir until eggs are done.
Toss a couple of handfuls of grated jack cheese and serve with warm tortillas.
Serves two hungry or 3 people.

This is kind of like spaghetti sauce. Everybody does it differently but it always comes out as the same stuff.

This is the kind of stuff I can eat around mid morning. Actual breakfast is only enough to keep the drugs company in my stomach. However, when I get hungry, this is what I want.

Yes, it can be scaled up or down.
