I made a big meatloaf for Bill last night, which he loved, but I'm avoiding it. Eating simpler this bad tummy cycle.

(146,218 posts)I have a variety of leftovers from the reunion that I would like to use up, including some tortillas, lettuce, tomato, cream cheese and turkey. So, I am thinking that some smothered turkey burritos would be great.
Sorry about your tummy problems. I love meatloaf sandwiches. Can you handle that?

(22,147 posts)My sister and b-i-l were here from Wed. until Sat. after breakfast. We both like to cook and treat each other to new recipes when we get together. So appetizers every night with drinks and a bigger breakfast than usual and I know I picked up the weight.

(2,012 posts)I love this recipe from the old anthology Horn of Plenty:
Stuffed Pork Chops in Orange Sauce
4 pork chops cut 1 1/4 in. thick
2 C. firmly packed grated seasoned bread crumbs
2 T. grated onion
6 T. melted butter
Slit chops from fat side to bone to form a pocket. Mix crumbs, onion and 3 T of the melted butter. Stuff chops; fasten openings securely with skewers or toothpicks. Grease a large heavy skillet and brown chops slowly on both sides. Pour off any fat.
3 T. flour
1 C. orange juice
1/2 C. white table wine
1/4 C. water
1/4 C. brown sugar
2 T. grated orange peel
2 t. grated lemon peel
In a saucepan blend remaining 3 T. butter with the flour; add orange juice, wine and water; cook on low, stirring until mixture boils and thickens. Add brown sugar, orange and lemon. Pour sauce over chops in the skillet. Cover and simmer gently about 1/1/4 hrs until chops are tender. Turn and baste and add a little water if sauce becomes too thick.
Serves 4. Good with sweet potatoes, a spinach ring filled with corn, sliced, baked apples, or apple sauce.

I remember this dish from childhood and love it still.

(22,271 posts)Split pea soup and bacon and tomato sandwiches (out of lettuce). I actually had some leftover butternut squash soup (one of my favorite soups) instead of split pea just because I wanted to get rid of the last of it.
Tomorrow will be turkey pot pies. Yummmm!
